QUESTION

1c. Varying the amount of folding 80 strokes-follow the basic
formula, but fold 20 strokes after each addition (total of 80 strokes)

2a. Varying the amount of beating the whites
Under beating- Prepare the basic formula, but beat the white
only to the point where they will not quite hold a peak

INGREDIENTS

10g Sugar
15g Cake Flour
41g Egg White
32g Sugar
0.6g Cream of Tartar
0.1g Salt

PREPARATION

Sift together 60g sugar and 90g cake flour. Beat 244 egg white until foamy (as you seen in picture) Add 3.6g cream of tartar and 1g salt. Lastly begin adding 190g sugar while beating on fastest speed until peaks,just bend over. add the sugar flour mixture in 4 additions, as described in the basic formula. Weight 99g or batter into each of 6 individual loaf pans. Place 1 cake in each of the ovens prepared for variations. Bake each until the top of the cake springs back when touched lightly with a finger
